Wedding Cake 

This is an 8 egg sponge split into 3x 9" tins, sandwiched together with buttercream and given an undercoat of white chocolate ganache then covered with fondant. Decorated with sugar flowers I made earlier! and a sugar paste ribbon and bow.

Large Sugarpaste Roses

I made these roses from modeling paste that I made from fondant and CMC powder.  Start with a 25mm polystyrene ball, take a piece of wire and make a small loop in one end.  Push the straight end of the wire through the poly ball and build the rose on this light weight core.  I used a 5cm circular cutter to make petals and then thinned the edges and centers with a ball tool.  I used the edible glue to attach the petals.

Raspberry Cream Gateaux

This is a really attractive cake made with fresh raspberries and cream.  It is a 5 egg layer cake ( method as layer cake in earlier blog) filled with 200g of raspberries and 300ml of double cream and topped with fondant icing and more raspberries.  The raspberries have been soaked in creme de fruits rouges overnight to give them that edge.

Sugarcraft Book

I have been teaching myself how to make sugar flowers with the instructions of a small book called.
Sugar Flowers 20 to Make by Lisa Slatter (Search press )
 
I have found this book to be very helpful but I will say I find making sugar flowers difficult, but very rewarding when they turn out well. Also you do need to buy sugarcraft equipment and flower paste not roll out icing.

Wedding Cake

This wedding cake is for my brother in-law Nigel and his Fiancé Krista. The bottom tier is a rich fruit cake and the top tier will be a sponge cake.



Turn the cake upside down and pack the gap at the bottom with fondant icing.  Use apricot jam thinned with water and warmed in a sauce pan to make the icing stick.  Fill all the defects with icing too.


Roll out icing ( I would normally use marzipan) and lay on cake and smooth with your hand over the top and then round the edges.  Gradually work down the sides of the cake in one area at a time then trim the icing at the bottom.
I will decorate the cake next.
